The process leading to the absorption of metabolites from food is a multistep reaction composed of oral, gastric and intestinal digestion, absorption in the upper part of the gut and colonic fermentation. The possibility to simulate in-vitro this complex process represents a very precious opportunity for applied research on food, food supplements and thier ingredients.
How can I study the metabolites produced by gut microbiota following digestion of food, food supplements and/or botanicals?
AAT integrates several in-vitro approaches to study the fate of food and food supplements following ingestion. Simulated in-vitro digestion, together with absorption by a monolayer of cultured human gut cells and fecal fermentation, allow to obtain a permeate for the subsequent chemical determinations.
